 Quinoa is one of those tiny foods that is so incredibly versatile and good for you, that you really should know a bit about it. In just 100 grams of uncooked quinoa you’ll find large amounts of magnesium and vitamin B, and 14 grams of protein. Quinoa can be used as a meat substitute or enhancer, grain substitute, and can also be used in some of the sweetest creations. Great Harvest in Medford would like to share a few of our favorite Quinoa Dessert recipes today.

Let us start with something simple, with this Strawberries and Cream quinoa recipe:

Ingredients You’ll Need:

  • ¾ cup of quinoa
  • 1 and ¾ cup of strawberries-cut in quarters
  • 2 tbsps sugar, agave, or honey
  • ⅛ tsp cinnamon
  • 1 dash of salt
  • ¼ cup of half and half-you can always use fat free
  • ½ tsp vanilla extract
  • ¼ cup of sliced strawberries for decoration-and eating, of course

What You’ll Do:

  1. Rinse the quinoa and prepare it according to package direction
  2. Drain well, but keep warm
  3. Combine 1 ¾ cups of strawberries, sweetener, cinnamon, and dash of salt
  4. Heat until berries are warm
  5. Add and stir in half and half; stir in the quinoa and vanilla
  6. Divide the mixture into as many bowls as you’d like (this is a recommended 4 servings recipe) and top with sliced strawberries

You’ll need:

  • 1 cup of quinoa-cooked
  • 1 cup of oats-uncooked
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 2 tbs brown sugar
  • 1 cup chopped fruit-apple, coconut, or blueberry are great suggestions
  • 2 lightly beaten eggs
  • ½ cup of melted chocolate pieces

Directions

  1. Preheat the oven to 350 degrees
  2. Mix cooked quinoa, oats, and fruit
  3. In a separate bowl, mix cinnamon, sugar, and dash of salt
  4. Add the spices to the quinoa and oats
  5. Stir in the fruit you’ve chosen, chopped or mashed
  6. Add eggs and mix
  7. Scoop the mix into sprayed muffin tins
  8. Bake from 15-20 minutes 
  9. After they’ve sufficiently cooled, dip them in chocolate and place them in the refrigerator to harden
