If you’re a fan of yellow squash, or summer squash as some of us call it, then you’ll love this recipe we would like to share with you today. If you’ve got your own vegetable garden, then perhaps you’ll have some of these veggies ready for this delicious meal. Here at Great Harvest in Medford we’d also like to invite you to stop by and have lunch with us on those days you just don’t feel like cooking. 

Ingredients: 

  • 8 to 10 medium yellow squash
  • ½ cup of chopped tomato
  • 1 medium onion, chopped
  • 2 slices of fried, crisp, bacon (optional)
  • ½ cup of shredded cheese (we recommend cheddar)
  • ½ teaspoon of salt
  • black pepper to taste
  • butter to taste

Cooking Instructions: 

  1. Preheat the oven to 400 degrees
  2. Be sure to wash all of the vegetables before chopping or cooking
  3. Cook the squash for about 8 minutes on simmer
  4. Drain the squash and cool 
  5. Cut a small slice from one side of each squash and remove the seeds
  6. In a large bowl, combine the other ingredients, minus the butter
  7. Spoon the ingredients into the squash
  8. Add butter to the top of each squash
  9. Bake for 20 minutes 
This meal will make between 5 and 10 servings

You can use this as your main dish or remember that it is an excellent side dish to a grilled or baked chicken dish. Either way, you won’t regret it.
